Chorizo & Bacon Pasta recipe

Easy and delicious...Enjoy!
Chorizo & Bacon Pasta (2 servings)

Ingredients:
100g Picante Chorizo diced
200g streaky bacon cut into smallish strips
100g Portabello mushrooms sliced
Pot of Crème Fraiche (240g)
5 handfulls of small pasta shells
Salt and pepper to taste

Method
Put large pot of salted water to boil…meanwhile..
In a large frying pan gently heat a teaspoonful of olive oil and add the chorizo until well cooked (probably quite a lot of fat will exude from the chorizo but adds to the taste!)
Put the pasta shells into the boiling water and stir once
Needs about 10 minutes to cook
Add the bacon strips to the fry pan and mix well with chorizo
Add mushrooms if using and mix well
Season with black pepper
Drain pasta shells and tip into frypan with chorizo and bacon, mix well
Add pot of crème fraiche, mix well until all covered

Warm a couple of plates and enjoy!!
(My pet hate is having hot food served on cold plates!!)

With regard to your pet hate - are you my dead grandma? If the plate wasn't molten lava it wasn't hot enough.

Ah choritzo and bacon with Portabellos, a marriage made in heaven........delicioso.
But.......that dish is screaming out for a sauce, Eltorro, and 'no', the creme fraiche doesn't cover it!
Made me sad now thinking of my beloved Playa Levante in Beni.

Actually the creme fraiche, when mixed with the chorizo 'fat' does make a very nice sauce (well, sufficient for me anyway)

Agreed. Creme fraiche makes an excellent base for a sauce when combined with something fatty. I make a cheese sauce for pasta that uses creme fraiche as the base. A real nice crumbly mature cheddar works best although if using full fat creme fraiche you have to be careful not to let it split. I prefer using half fat creme fraiche as it binds to the fats in the cheese better.

Agreed. Creme fraiche makes an excellent base for a sauce when combined with something fatty. I make a cheese sauce for pasta that uses creme fraiche as the base. I use it when making Mac N Cheese for the boy... Rather partial to it myself now.
